The need for Plenum Cable

We are doing some Audio/ Video and CATV wiring in a 100+ year old church that has a wood and steel structure. All of the floors are wood; it's a six story structure. Most of all the electrical wire is the old fabric covered stuff, and the rest is all PVC. My question does all new wiring have to be plenum cable? None of it will actually be in an air plenum.

If you are installing the wiring between the amplifier outputs and the speakers watch out for the class of the output wiring. 640.9(C) could trip you up if the back of the amplifier states to use a class 1 wiring method. The problem is there is no manufactures that make this wire and using a class 2 or 3 regular speaker wire would be a violation. This could be an issue with your AHJ, unless you used a chapter 3 wiring method.
I would read all of 640.
