If I run 2 parallel conductors for each phase to a 3 phase motor, will each conductor on 1 phase carry half the current as both?

That is the goal, but differences in length, terminations and routing will all contribute to keep it from splitting perfectly in half. One will carry a bit more one will carry a bit less.

iwire is correct in his reply, however, as long as the install is in accordance with NEC 310.10(H)(1) then your practical calculations should be carried out as if each phase conductor will carry it's fraction of the load. I.E. with 2 parallel runs each run will carry 1/2 the current, with 3 parallel runs each run will carry 1/3 of the current, and so on.
