Are there any special wiring methods required for a dental office/clinic? For example, m/c cable with isolated or redundant ground?

Have you checked Art 517?
Take a look at the definition of heath care facility.
Washington State (where I am) requires plan review for medical offices including dental offices, check for local codes in your area.

There is a recent post in the electrical contracting and engineering section that will answer you question exactly. Talks about use of a type of AC cable called HCF for just this use I believe.
