I am working at a Spice company requiring the use of Nema 12 enclosures. At the same time, I am being told explosion proof wiring is not necessary. Would emt and compression fittings be acceptable in these areas?

Are you talking about an area where combustible dust is the issue? If so, you never need explosion proof wiring methods for a Class II installation. Those methods are only required for flamable gas (Class I) installations. The wiring methods permitted for Class II installations are found in 502.10. 10(A) is for Division 1 locations, and 10(B) is for Division 2 locations.
