What is the smallest depth size for a 4"x4" wall recessed junction box in order to fit an 1-1/4" conduit on it? How about the depth for an 1-1/2" conduit? It's just to run AV and data cables in it, no wiring devices installed in the j-box just cables passing through.

Well, you have to fit the fitting and locknut, plus the wall-surface thickness.

I have found 4" deep ones:

And how many boxes have each of us seen that where so stuffed with cat 6 cables they couldn’t put the cover on, looked like a blue bubble

I don't think there's a legal minimum. As I said above, you have to fit the fitting and wall.

For 1.25" KO a 2 1/8" deep standard box will work if you can use a 4 11/16" box instead of a 4".

I think I would only do this if I were pulling straight through and only ending say 1-4 of the cables at that box.

No angle or U pulls in that small of a box. They don't even recommend that short of radius bending of the cable if you want maximum performance out of it.
