When calculating box fill, where can I find or better yet how does one calculate the volume of a conductor larger than a #6 the maximum indicated in table 314.16, where it terminates to a device connected to a junction box?

Larger than 6 the enclosure size is dictated by the size of the raceways.

How do you size a box if you are using cables?

You use pretend you are using the smallest allowable raceway for the conductors in the cable

From 314.28

When transposing cable size into raceway size in
314.28(A)(1) and (A)(2), the minimum metric designator
(trade size) raceway required for the number and size of
conductors in the cable shall be used
