If you have multiple services on small buildings adjacent to one another (all being feed from a common Main Distribution Panel) are the the buildings allowed to be interconnected to a common ground rod(s)? Or are you required to have a rod at each service? What if in doing so you are not able to space the rods far enough away from one another to maintain the minimum distance or 6' between rods?

I assume this is not a multiple service setup as you mentioned. If all the meters are fed with one service lateral, drop, etc then it is one service. Two rods are all that is necessary in this case.

I think you have one service and multiple feeders. Only need one GES for the service but whatever GEs are available at each building have to be tied in via the EGC.
